Ingredients
4–6 chicken thighs, bone-in or boneless
2 tsp Antonio’s Paprika (Colorau)
1 tsp Antonio’s Portuguese All-Spice
2 Antonio’s Bay Leaves
¼ cup Antonio’s Hot Pepper Rings, chopped
3 cloves garlic, minced (about 1 Tbsp)
2 Tbsp olive oil
Juice of 1 lemon (about 2 Tbsp)
1 Tbsp red wine vinegar
½ tsp salt, or to taste
¼ tsp black pepper, or to taste
Fresh parsley for garnish
How to Make Piri Piri Chicken
1. Prepare the chicken. Pat the chicken thighs dry and place them in a large bowl or dish.
2. Make the marinade. Combine the paprika, Portuguese All-Spice, bay leaves, chopped
Hot Pepper Rings, garlic, olive oil, lemon juice, red wine vinegar, salt, and black pepper. Stir until well combined.
3. Marinate. Pour the marinade over the chicken and coat each piece thoroughly. Cover and refrigerate for at least 2 hours. For even more flavor, let the chicken marinate overnight.
4. Cook. Preheat the oven to 425°F (220°C). Roast the chicken for approximately 30–40 minutes, or until the thickest part reaches an internal temperature of 165°F (74°C).
5. Serve & enjoy. Remove the bay leaves and garnish the chicken with fresh parsley. Serve hot with your favorite sides.
