This Greek Pasta Salad recipe from The Mediterranean Dish is such a great summer meal and is perfect for the upcoming 4th of July weekend. It is light and refreshing, making it the perfect side, but can also be a quite filling meal. We enjoy pairing this dish with our Amaral’s Linguica and Chourico cooked on the grill to make the perfect summer meal.
We added in our Hoto’s feta cheese to take this meal to the next level. Hoto’s feta cheese is creamy, delicious, and the secret ingredient to this dish as it is authentic, high-quality Greek feta cheese.

*Note- We doubled this recipe so it is perfect for a summer party or gathering!
-1 box of farfalle pasta
-1 cup of Hoto’s Feta Cheese
-1 thin Italian cucumber
-1 ½ red peppers (we used a mix of red, orange, and yellow bell peppers)
-1 cup of Kalamata olives (make sure to remove the pits!)
-1 red onion
-2 squeezed lemons
-1 cup of chopped fresh parsley
-2 tbsp. of red wine vinegar
-4 cloves of garlic
-2 tbsp. of dried oregano
-Salt & pepper to taste
-1 ½ cups of olive oil
-Cook pasta and drain
-Chop up all your veggies and garlic cloves
-Wisk together your dressing ingredients in a large bowl
-Add your chopped veggies and pasta to the bowl and mix
-Cut your Hoto’s Feta Cheese into small cubes and add on top
-Enjoy! This dish can be enjoyed right after cooking, but tastes best the next day after chilling in the fridge!
