With Amaral's Ground Chourico

A delightful way to incorporate our Amaral’s Ground Chourico is in this Caldo Verde Potato Salad. This refreshing yet satisfying dish serves as a wonderful transitional meal as we bid farewell to winter's hearty comforts and embrace the freshness of spring.

Infused with the essence of Portuguese tradition and featuring our own Amaral's Ground Chourico, this salad brings together the creamy texture of potatoes, the fresh bite of kale, and the savory taste of Chourico, all dressed in a zesty mayo sauce. It's a harmonious blend of flavors and textures that perfectly complements the changing season. Whether you're planning a picnic, a backyard barbecue, or simply craving a light yet filling meal, this Caldo Verde Potato Salad is a delightful choice.
Ingredients:
3 lbs. Yukon gold potatoes cut into ¾ inch chunks
8-12 oz. fresh kale julienned or chopped
1 small yellow onion finely diced
4 cloves garlic sliced
2 scallions chopped

Dressing
1-1 ½ cup(s) mayo
1 tbsp. white wine vinegar
1 tbsp. coarse ground mustard

Directions:
1.     Boil your potatoes in salted water until fork tender (about 10 minutes), drain and set aside to air dry.
2.     In sauté pan, cook Amaral’s Ground Chourico until fat is rendered, remove to paper towel to drain.
3.     Reserve 2 tbs. of fat in your pan. Over medium heat, add onion, garlic, and kale, seasoning with salt and pepper.
4.     Cook until kale is wilted and tender.
5.     In a large mixing bowl combine potato, kale mixture, and Chourico.
6. Combine dressing ingredients in a separate bowl and toss with the potato salad to combine.
7.     Refrigerate for at least 1 hour to incorporate flavors.
8.     Sprinkle scallion on top to garnish before serving cold.
