Spicy Chouriço Stew Recipe
Ingredients
1 tbsp olive oil
2 sweet onions, finely chopped
8 garlic cloves, minced
3 tbsp tomato paste
2 lbs potatoes, peeled and cut into bite sized chunks
2 lbs Amaral's Chouriço, cut into rounds or 1/2 moons
1 lb white mushrooms, quartered or thick wedges
8 cups low-sodium chicken broth
1/4 cup Antonio's brand paprika
1/2 tsp cayenne pepper
2 Antonio's brand bay leaves, finely crumbled
1 sp dried thyme
1/2 bunch fresh dill
Kosher Salt and Black Pepper to taste
Sour cream to garnish/dollop
Steps
In large soup pot, heat olive oil
Add chopped onions and potatoes, stirring until onions are translucent and fragrant.
Add tomato paste, stir to coat potatoes. Cook for a minute-two minutes before adding chicken broth, spices, and chouriço.
Bring to a simmer and add 3/4 of the whole bunch of fresh dill.
Finely chop the remaining dill and set aside.
Allow to simmer until potatoes are soft and broth has thickened. Remove wilted dill from pot. Serve in bowls with a dollop of sour cream and sprinkle of fresh dill.
